Chicago is home to some of the world's most creative food, and Polombia is proof that great flavors know no borders.
Owners Phillipe Sobon and Cynthia Orobio combined their family traditions to create one of the city's most unique culinary concepts. Sobon was raised in Chicago by his Polish family, while Orobio grew up in Texas in a Colombian household. During the pandemic, the couple began experimenting in the kitchen, discovering that the comforting flavors of Poland and Colombia paired surprisingly well together.
The result was Polombia—a restaurant built around the idea that two cultures can come together on one plate.
Their menu features creative fusion dishes like the Arepaski, a playful combination of an arepa and Polish flavors, and the Emparogi, a delicious mashup of an empanada and a pierogi. These inventive creations have quickly become customer favorites and showcase the couple's passion for celebrating both sides of their heritage.
Today, Polombia continues to introduce Chicagoans to a fresh take on Polish and Colombian cuisine. You can even find them serving fans at Chicago White Sox games and at their food hall location on the first floor of the Accenture Towers, bringing their unique flavors to one of the city's most iconic sports venues.
